Caprese Avocado Toast

Breakfast does not have to be all cereal and syrup. Sure, those things are fine for the occasional weekend treat, but what if you are wanting to impress your partner? Or you are wanting to make a special breakfast for your visiting in-laws? If you are looking to step up your morning eats, keep reading.

There are few things that have hit mainstream American breakfasts quite as hard as avocado toast. This breakfast is our take on a sophisticated version of the ever popular avocado toast.

Here are the ingredients you will need to make this stellar dish:

  • A bread of your choosing. We decided to go with sourdough because we like the nice bite it adds.
  • 2 ripe avocados
  • 2 eggs
  • Fresh basil
  • Fresh mozzarella
  • Baby tomatoes, peeled
  • Balsamic vinegar, about a cup
  • Salt and Pepper for taste

To begin, grab the two ripe avocados: place one in a bowl and mash it with salt and pepper for seasoning – this will be used as the spread on your toast – with the other avocado, use a spoon to remove it from the skin and cut the avocado into thin slices. Leave the sliced avocado on the cutting board until you are ready to assemble the toast.

Next, place your pieces of bread in the toaster to your desired setting. Once they pop up, place them on a plate and smear the mashed avocado on top.

Take your fresh mozzarella and rip off small portions; sprinkle the mozzarella on top of the avocado toast. Now grab your peeled baby tomatoes – baby heirloom tomatoes work great for this – and place them on the avocado toast next to the mozzarella.

Now it’s time to make a balsamic vinegar reduction. Put your cup of balsamic vinegar in a small sauce pan and cook over medium low heat until the vinegar has reduced to at least half of the initial amount, or until a desired thickness is reached. To add extra flavor to your reduction, you can add in smashed garlic or other herbs, but it is not necessary.

While your balsamic vinegar reduction is cooling, it is time to cook your eggs. Get a pan nice and hot before adding the oil. Turn your pan down to medium low and then add your eggs, being sure not to crowd the pan.

As the eggs are frying, add salt and pepper to taste. Shortly before the eggs are finished cooking completely, turn off the heat and grab your balsamic vinegar reduction. Take a spoon and drizzle the reduction over the tomatoes and mozzarella on the toast.

After the toast has been drizzled with the balsamic vinegar reduction, lay the thin slices of avocado on top. Now grab your fried egg and gently place it on top of the toast.

Season again with salt and pepper.

Take your fresh basil and roll into a cigar. Use a sharp knife and cut the cigar, as if you were cutting cookie dough, to create long, thin ribbons of basil. Congrats, you just did what is called a chiffonade.

Sprinkle the ribbons of basil on top of your toast and voilà! Your elegant, sophisticated take on avocado toast is complete in no more than 10 minutes.

This caprese avocado toast will leave your guests wanting seconds, and it is so easy to make that you will not even mind cooking some more.
